PACHCHEPERUMAL RICE AND MIXED BEAN SALAD

Easy meals

2 cups Akhsata Pachchaperumal  Rice

400 g Four bean mix, drained

1 cup Green beans, cooked

1 Spanish onion, sliced

1/2 bunch Parsley, chopped

1 punnet Cherry tomatoes, halved

4 tbsps Extra virgin olive oil

2 tbsps White wine vinegar

1 tsp Wholegrain mustard

METHOD

1 Cook khsata Pachchaperumal  Rice as per pack instructions. Allow to cool.
2 Place all ingredients in to a large bowl and mix together gently.
3 Season to taste with salt and pepper.
4 Tip: This salad is great served at a BBQ or as a healthy lunch. Variation: Sprinkle with some crumbled fetta cheese.
